Meet Chef Maciej Mierzejewski - IOM Meats

Maciej is our ‘go to’ chef for cooking delicious dishes for customers to try when we visit community events or organise product launches. He’s also provided us with some fantastic recipes, many of which are featured on our website and on handy leaflets that are available from our retailers.

We love how Maciej takes traditional Manx meat recipes and gives them a magical, modern twist by adding exciting new ingredients and flavours.

His passion for cooking began as a child in Poland where he learned from his mum and grandmother, and later went on to gain his first experiences of working as a chef. After moving to the Isle of Man he studied at Isle of Man College where he received an NVQ Level 3 qualification. Maciej also credits well-known restauranteur Tony Quirk (who founded the L’experience restaurant and ran it with his wife Jill for many years) for helping him to learn and gain experience.

When he’s cooking at home, Maciej loves creating meals with Isle of Man Meats beef, lamb and pork. His Chinese Style Manx Spring Lamb Loins recipe, and beef medallions with Manx asparagus and port jus, are two of his favourites dishes.

His favourite chefs and food writers include the late Sir Albert Roux OBE, and the renowned journalist, historian and television personality Robert Maklowicz whose work has done a great deal to promote Polish cuisine.
Finally, Maciej has these two top tips for aspiring chefs; always make sure you follow recipes exactly and weigh/measure the ingredients; and most importantly enjoy the process of cooking as much as the eating!
