Easter Lamb with Lee Mayers - IOM Meats

We caught up with Kirk Michael based butcher Lee Mayers, to chat about the impact of lockdown on his local business, and our delicious Manx spring lamb.

✅ How has the business coped with the Island’s third lockdown? Have you seen an increase in orders and deliveries?

There has been a huge increase in new customers trying out our wide range of produce, and many have continued to use us throughout all 3 Island lockdowns. There is plenty of delivery slots and stock available, and we have all the usual safety measures in place. We're busy, but running smoothly. This time around I cut back on as many deliveries as I was doing lots of these out of work hours, which was too much along with running the shop and keeping up with demand, but I still cover deliveries locally for kirk Michael, Ballaugh and Sulby.

✅ How has your customer profile changed over the past year?

The customer profile has definitely grown and we have received lots of great reviews from happy customers. We're getting lots of repeat business, with customers returning to try our fantastic range of produce - for me that's what doing this job is all about, when they walk in and say wow what a display!

✅ So with Easter approaching, we all want to know how we can cook the perfect lamb?

Leg lamb roasts are a great option. To cook these, pre-heat your oven to gas mark 5 (180 degrees), add your preferred spices and rub ( I like mint marinaded over night before cooking). Cover with foil and cook for 25 minutes per lb, uncover and cook for a further 25 minutes, depending on how rare you prefer.

I love a delicious Lamb shoulder roast, this requires a more gradual cook, so pre-heat over to gas mark 3 1/2 (165 degrees), add your cloves and rub and garnish. Cook for 3 hours and 40 minutes. Remove foil for the last 20 minutes until the meat falls away from bone.

✅ What is your favourite cut of lamb?
Manx lamb breast stuffed with wild sage and roast onion wholemeal stuffing...yum !

✅ What’s a staple at your Easter table?
I usually sell out of lamb very fast so a nice Manx rolled sirloin roast with all the trimmings, if that’s gone too then egg and chips it is!
