Manx Lamb Kofte Patties | Cheap Eats with Manx Meat - IOM Meats

Can you really enjoy the distinctive, rich, and utterly delicious flavours of Manx lamb when you’re sticking to a budget? Absolutely!

This economical and easy-to-make recipe comes courtesy of local hero and one of the Isle of Man’s legendary sheep farmers, Anna Kerruish. It’s a wonderfully flexible dish that uses Manx lamb mince and several cupboard staples.

MANX LAMB KOFTE PATTIES

▹ Up to 12 servings
▹ Prep Time: 10 mins
▹ Cooking Time: 20 mins

INGREDIENTS

• 1kg Manx lamb mince
• 2 eggs
• 4 tbsp plain flour
• 4 tsp cumin seeds
• 4 tsp coriander
• 1 tsp chilli
• 2 tbsp parsley
• 2 tbsp mint
• Salt and pepper
• Splash of lemon juice
• Olive oil
• Garlic to taste — wild garlic is currently in season

METHOD

1. Mix all the ingredients together in a large bowl.

2. Split into 12 burger-sized portions and pop them in the freezer.

3. When ready to cook, remove the portions from the freezer and allow them to defrost. They should do this quite quickly but give yourself enough time to ensure they’re thoroughly defrosted.

4. Fry the patties in olive oil. Aim for around 4 minutes on each side.

5. Throw in some cherry tomatoes and chopped spinach towards the end if you enjoy them.

6. When ready to serve, there’s so much choice. You can dish them up with tzatziki on flatbread, tacos, nachos, baked potatoes, or as a delicious lamb burger.
