MANX BEEF CHILLI

TOP TIP: Chilli is brilliantly versatile and can be made in bulk for freezing — and you don’t have to stick with trusty old rice. Try it in jacket potatoes or crispy potato skins, serve it up with nachos, or pair it with some lovely crusty bread. With a fresh green salad on the side, it’s also a great choice for a filling lunch.

INGREDIENTS

• 500g Manx beef mince
• 1 large onion, peeled and finely chopped
• 2 cloves garlic, finely chopped or minced
• 1 red pepper, roughly chopped
• 1 x 400g tin of chopped tomatoes
• 1 x 400g tin of red kidney beans, drained and rinsed
• 1 tbsp tomato puree
• 2 tsp chilli powder
• 1 tsp ground cumin
• 1 tsp smoked paprika
• Salt and pepper to taste
• 2 tbsp olive oil (or sunflower or vegetable oil)
• Fresh coriander leaves, chopped (optional)

METHOD

1. In a large pan, heat the olive oil over medium heat.

2. Add the onion and garlic and cook until softened, about 5 minutes.

3. Add the beef mince and cook until browned, about 10 minutes.

4. Stir in the diced red pepper, canned tomatoes, tomato puree, chilli powder, cumin, and paprika.

5. Season with salt and pepper to taste.

6. Bring to a boil, then reduce the heat and let it simmer for 20 minutes, stirring occasionally.

7. Stir in the red kidney beans and simmer for another 10 minutes.

8. Serve with rice or tortilla chips and sprinkle with chopped coriander, if desired. A sprinkling of grated Manx cheddar or a crusty Noa roll are also fabulous additions if you fancy a little extra taste of home.
